Acho de péssimo tom e até falta de educação ficar esculachando um membro por que ele perguntou algo que se julgue bobo ou simples demais. Fora que afasta as pessoas daqui.

Mas, nas digitais, serve pra várias coisas (depende da config que fizer) - medição de exp., bloq de exp, AF, entre outros.
PS.: Fiquei curioso e já pesquisei no manual.. PG 51 - Serve pra medição de exp.

Esse fio virou uma discussão sobre perguntas básicas porque eu lembrei a galera que nem sempre a gente sabe como é a situação do perguntador.
Acho que a primeira resposta explicou o botão mas a titulo de curiosidade eis o conteúdo da página 51 do manual dessa canon eos 300 analógica que tem esse botão:
PARTIAL METERING USING AE LOCKIn high contrast situations as a person spotlighted against a dark background, the exposure may turn out too bright or too dark in certain areas of the photograph. To obtain a more accurate exposure in such cases, use AE lock to lock the subject's exposure level.
1 - Aim the center of the viewfinder over the area where you want to lock the exposure. Then press the shutter button halfway to focus.
2 - Press the <*> button.
- The <*> indicator lights in the viewfinder and the exposure level locks (AE lock). The indicator ramains displayed 4 sec. after you let go of the <*> button.
- Each time you press the <*> button, AE lock takes effect for the current exposure level.
- AE lock is canceled 4 sec. after you let go of the <*> button or if you turn the Command Dial.
- If the Command Dial is set to <M> (see page 48), the exposure level index will show the difference between the exposure level you have set manually and the subject's brightness based on partial metering.
_ If AE lock is to be executed again, keep pressing the <*> button and press the shutter button.
